Food Safety for food handlers

Everyone consumes food, and safe food is a significant element of public health.

It is a legal requirement that anyone who handles food for others (either paid or voluntary) must receive training or instruction in how to handle food safely.

What is it?

This one-day programme leads to the RSPH Level 2 Award in Food Safety in Catering qualification, which is assessed by a multiple-choice exam at the end of the course.

Learners will cover:

  • How to handle food safely
  • Bacteria growth and the effect on food
  • Temperature control (chilling and cooking of food)
  • How to prepare, cook, serve and store food safely
  • How to protect food
  • The law relevant to public health and food safety
  • The application and monitoring of good food safety procedures
Who is it for?

This course is essential for those who work in catering – preparing, cooking and serving food. But those who work in related sectors such as food retail, child care, residential care or transport will also benefit from this course if they handle food as part of their duties and are concerned about public health.

Building a HACCP plan

To protect the public’s health, all food related organisations are required to have a suitable system to manage food safety that is fully embedded into their catering operation. This is known as HACCP (Hazard Analysis and Critical Control Point).

We have designed this programme to introduce participants to HACCP and support them as they implement this into their own catering business through on-site mentoring.

What is it?

This programme includes a workshop and optional mentoring session.

Stage one is a half day HACCP workshop held at the RSPH head office in London. This will introduce you to HACCP and support you in designing your own HACCP plan.

Stage two consists of a mentoring visit to your own food business. You will be allocated your own experienced and qualified mentor from RSPH. They will observe your catering business in action, check this against your completed documentation to ensure full implementation of your food safety management system.

Who is it for?

This course is for catering and food businesses. You will need to have attended food safety training within the last two years to prepare you effectively for the programme.
